As a self-proclaimed Aymeric's #1 obsessed fangirl, I have two solid theories as to why is he in an elephant suit. Theory 1: He's a very busy person, so he decided to sneak out at night disguised as an elephant, because there's a ton of people in costumes during fêtes, so no one would suspect him of shirking his duties and taking a stroll in the Empyreum. I haven't seen him appear during the day. Theory 2: From a certain piece of dialog, you find out that Aymeric offered Estinien a job as a guardsman in the Empyreum. Estinien tells you something about Thavnairian outfits, how silly they look and how he should send one to Aymeric in lieu of an answer to his job offer and "let him stand guard thus attired and be the talk of Empyreum, if not all Coerthas". Elephant suits can be obtained in Radz-at-Han, so that's very possible. As to why would Aymeric wear it, why not? He's adorkable.
