8/7 Pvp – naaaah not for me. not gonna do that
6 – Ishgard Restoration seemed doable but tedious and boring, it's just a question if you wanna waste your time for it, no skill involved
5 – I like Fates, maybe ill do it. Already did like 1k Fates for all SHB Relics
4 – Mentor Mount – I'm 1/4 of the way there. Gameplay and skill involved and fun. Average time per Roulette seems to be about 5-7 Minutes
3 – Hunt Mounts- ehh it's fine to do with Centurio but the mounts arent that impressive anyways
2- I do want to farm treasure dungeons at some point so who knows. At least it's active combat gameplay

It took me about 8 months to get the Big Fish title. You're at the mercy of RNG for that one. If you get locked out of progression for weeks at a time and then you get a mere 6 minutes window in the middle of the night to have a SMALL chance at getting a bite, and then have the fish escape when you do get a bite two months later… Ugh, I'm sure everyone that got the title can relate. I get why it's not in the video though. It takes a long time to obtain, but the bigger part of the time it takes to obtain the title is simply waiting on the correct time window of your last few fish and hoping to get lucky. (As opposed to raw grinding, which is what the video is about.)
It hurts me to see that I have none of these, despite being an unashamed addict
For anyone even considering Astrope, do it before 7.0 since guild hests are announced to be retiring and guild hest are absolutely one of the fastest way to progress that and they are fairly common in the pool of duties… since no one does hests otherwise.
With fates and hoards, if you optimize for achievement completion they become a lot faster. Fates are one minute each and hoards are just over one minute each (10 minutes for 9). Granted that's still 167 hours and 370 hours for nothing but achievements, but it's a lot more reachable.
As for Astrope, when I did it I counted 989 roulettes in 178 hours. So around 360 hours for 2000 at that pace.
You missed the Big Fish achievement. Getting all the fishes in the game. It doesn't even compare to your first few choices.

I've seen a very obvious bot outside of Potd right before 6.4 going in and out constantly all day and now has The Accursed title. He's now been lately I'm assuming botting his way to the Pteranodon because he's been in the Diadem since.
There's also the title for completing all of Gold Saucer (How I Learned to Stop Worrying and Love the Saucer). It takes on average 3-4 years of weekly lottery to get the 1million needed for the achievement

If you wanted to include someone from the OCE (Materia Server), Papi Chai is probably the most well known and highly regarded player. He is one of the richest players on the server and funds/hosts a variety of venus/activties that are quite popular. Additionally he owns one of the more popular guilds on the server (Chair Dynasty) despite not actually engaging in much content himself. He can be found dressed in a gold suit doing the manderville dance next to the aetherite in limsa on the sophia server. I doubt the OCE playerbase is big enough for him to be that well known, but you could ask pretty much any player on OCE and they will probably know who he is. It really just wouldnt feel the same without him, -on a server with so few players, it feels like his presence makes a huge difference.
8: In my experience, Frontline PvP takes about 12 minutes. They got rid of the one map that kept lasting 20 minutes. ~180 hours
7: Crystalline Conflict takes 4 minutes on average, but padding an extra minute for loading in and out seems fair. I appreciate not including the queue time in your actual estimate, so 420 hours still seems about right.
6: I participated in this! Expert recipes might get easier as crafter stats continue to rise each expansion, but you could also make 10s of millions of gil from selling all the reward stuff!
5: Highly recommend going to the last zone of the expansion for this one. Get rich off those gemstones! Alternatively, do low level FATEs as a BLU mage and get 1 minute clears.
4: Unfortunately, the path to optimize this grind means insta-leaving anything difficult and taking the leave penalty. So if you're a terrible person, this can take as little as 200 hours.
3: This is probably closer to 420 hours of concentrated effort, but having to keep yourself on the lookout for Hunt callouts is a whole other level of stress I'm unwilling to deal with.
2: I'll take your word for it. I seem to reach 5 consecutive successes every 20 hours or so. If it's really 50/50 (much doubt), I'd see 7 successes every 80 hours
1: I was looking at this one earlier. I opted to calculate it as running floors 1-30 only (resetting pomanders by only running 1-10 seemed suboptimal). Still, assuming you take 15 minutes to clear 10 easy floors, getting 2 chests each time in your haste, that's still 2,500 hours which is a full-time job for a year… which I think means some people are botting or there are several optimizations I have no clue about.
