Two episodes back to back? It's like all my namedays have come at once!
I hear you on the bonus XP issue. The Main Scenario questline and the XP curve have had a lot of changes over the years, each one intended to get people through ARR faster. Even now at the level 12 quests, there are already 3 old MSQs that you would've had to do if they hadn't been removed from the game, running around collecting ant mandibles and such. The intent seems to be that even if you ignored every single side activity and just beelined through the MSQ, you won't be stopped and told that you need to go out and level more, so you'd get to the start of Heavensward that much sooner. This would be true even without that New Server XP buff. Some people choose to play two or three classes at once to avoid getting ahead in levels, but that would of course entail spending more time on non-MSQ stuff.
And yeah, it'd be better to leave the Armoury Chest option on for now so that the Recommended Gear button can find your new items. It's worth turning off much later when you no longer routinely find upgrades to your current gear.

As far as the fire and ice thing I recommend reading your Traits. You can find this in the actions and traits page. Look for Aspect Mastery 1 it's probably your only trait at the moment. Everything will make a lot more sense as you level.
I recommend do hall of the novice for your first gear set its lvl 15 and can easy last you to 25+ before you get your first dungeon quest.
