As a little point to add to JoCat's talking about the whole "3,000,002 health boss" thing, I've seen clips of Ultimate tier victories being snatched from the jaws of defeat purely because of DoTs on the boss. So yes, the smaller numbers VERY much matter

2:25 One of the reason why healers don't do much (or even not doing any) damage in battles is because we have games like FFXI. In FFXI we use TP (Technical Points), points that accumulate by doing damage or taking damage to perform special moves when TP reach 100% or above. So, if healers hit the monsters then the monsters will gain TP; and if healers are doing low damage and special moves of the monsters can do huge damage, then such TP feeding to monsters is a bad deal. Thus, in those games, it is better for healers to stay away to avoid monsters getting TP in battles. In FFXIV the entire gameplay is different from FFXI, so that's why players should do things differently.
