Hey, just a tip so the screen is less cluttered: You seem to have very high HUD sizes, which you can scale down in: System configuration -> Display Settings -> High Resolution UI Settings. I have a feeling your's is turned up to 150% or 200%. Putting that setting to 100% will make the HUD smaller and less cluttered.
As for the pacing of the MSQ, that happens sometimes within ARR unfortunately. The expansions are way more streamlined and engaging.
As for the MMO elements, you will get the hang of it. This was your first dungeon, there are many to come. It was the same for me and now I am doing the very hard fights without issues. You just have to wire your brain a certain way and it will happen automatically. The group content also becomes way more engaging when you unlock more skills instead of just doing your combo all the time. You will be weaving skills that are 'off the global cooldown' (oGCD) in between your GCD skills (Weaponskills are on the global cooldown of 2.5sec, while Abilities are oGCD and can be used in between your weaponskills). That's what is called a rotation.
I am loving your journey and always looking forward to your next upload on FF14. Cannot wait when you get to the end of ARR when this game shifts into 5th gear.

The tutorials of "how do battles work in an MMORPG" you're asking for are called Guildhests in the duty finder and also Hall of the Novice. Both are amazing features that really no other MMO provides. FF14 is the only mmo ive played that actually goes out of its way to make content specifically for teaching people who are new to MMOs in general.
Both of these should have been dabbled with by lvl15 or so. Hall of the Novice specifically gives awesome lvl15 armor and an xp boosting ring that scales to lvl30 as a reward, along with the knowledge.
Most of the ARR duties can be easy if the people matched in your party are of higher levels, hence better gear, and if the tank and healer know what they are doing. If it were 3 sprouts with you, it will be a different story.
In terms of combat difficulty, I feel like the lvl 50 dungeon Keeper of the Lake is the first real difficulty jump due to the last boss' mechanics. This dungeon is in post-ARR tho. Dungeons do get harder as you will get more skill along the way.
Also make sure to do Hall of the Novice if you haven't already. That is where it will explain about tank/healer/dps roles. It will also give gear and a ring that boost exp.
Another note, I am a white mage main in end game and yes everyone has to deal damage to clear fights. It's all about optimizing and balancing between healing and dealing damage, while also have to adapt should somebody make a mistake and die.
