Yeah, I’m burning out on Savage Raiding, and it’s a result of trying to blind prog P8S. We successfully blind progged all the way to P8S, but we’re kinda done at this point.

I don't get the jabait part… is kind of a given snake needed to be hit 2x as the timers are same for 4 players and only 2 snakes.
Last boss is always mechanics heavy, boss having alternatives path for mechanics also common.
There is a reason why only like 5-10% of player base blind prog, they are extremely skill at solving mechanics and identifying patterns in SE design. Your group is just not skilled enough for it so don't feel bad because that is 90% of player base. Even with a guide people struggled
You guys are doing a lot of this in very peculiar ways… your “leg day” strat is awful… that’s Hippocampos from P2S mode. You should send your 1 players to your 2 marker, stack your 3 and 4 players on B marker, then your 2 players at the true center of the arena. Boss jumps on 2, then as it jumps on the center, 3’s swap with 1’s, then 2’s swap with 4’s. This strat allows uptime for the DPS check later. You guys are just making your own lives harder than they need to be tbh.
It sounds like you need more skilled players on your team, not just to execute mechanics, but to come up with strats for every one. Since the way you're describing it there isn't much analysis, and more running around frantically the whole fight.
You're getting gorgon 1 and 2, and dog 1 and 2 every fight, it doesn't change and flip everything on its head if you get 1 or the other first.

I've been playing since heavensward and while not a hardcore raider, I have done quite a bit of savage raiding throughout all the expansion. I think P8S part 1 is a considerable step up in terms of difficulty compared to everything else we've gotten in Endwalker, besides DSR and perhaps savage criterion. Especially when compared to P4S from last tier or even P7S from this raid tier, the jump in difficulty is huge. Fights with branching major mechanics (gorgon/leg) are a pain to prog even with guides, since whether or not you get to practice a specific mechanic is up to RNG and that's definitely something that can wear down newer players. And the DPS check shouldn't be underestimated even with all the gear right now. I think P8S part 1 is a little harder than what I expected for the end boss of the 2nd raid tier of an expansion. I think you can expect P12S to be slightly more difficult but I don't think it's guaranteed to have branching major mechanics in the same way that P8S part 1 has, which might make it less frustrating to prog if it doesn't have that.
I think the fact that you guys got this far blind progging as relatively newer players is pretty good. Hope you don't give up entirely on savage raiding, but if it's too much at some point, it's perfectly fine to just call it for the tier. Even if you do stop, hope you will continue to enjoy other parts of the game.

I know where you coming from but believe me when I say you need to step up game as a team to prog blind in savage.
Since I left WOW in the Exodus days I had a bunch of different statics (because of my time schedule being irregular and also 2 kids 🙂 ) and my experience with different statics was night and day, especially because the group is usually less of an issue in WOW. You want to be in a static with the same mindset and more or less within the same skill level as you to progress… going along with 1 guy that has troubles adjusting will be a pain to progress blind (in fine if you go with guides, but blind is super painful).
The main thing is that if you have too many fuck ups in phases you should be passing easily, then you will have an issue with progging bling… that's why you need a group within the same skill level. If you have a group that keeps wiping on "farming" phases because of 1 or 2 players, then it means your group is not balanced enough… if you are all making mistakes, then the group is not at "last boss" skill level (last one is always more challenging).
The fight is challenging and for a group that has so little time maybe get in the habit of recording the fights and checking the vods together to come up with strats… in a slow paced video you can spot solutions and its easier for everyone in the group to understand.
Blind progression in XIV is very heavily aided by historical knowledge of mechanics. The better an idea people have of what kinds of mechanics are used in the game and how they might be resolved, the better they become at figuring out mechanics they've never seen before. As you found out firsthand, sometimes mechanics seen earlier in a fight have a twist put upon them when they show up again later. That tendency is also a thing that would be considered foreknowledge. Not having this historical knowledge about how Savage raids are formatted puts groups on a severely sharp learning curve, and there aren't many people who both capable and willing to put up with that. That doesn't make them bad at the game. It's just how things are.
And if the 1st phase of P8S has given your group this much trouble, the 2nd phase will be so much worse to try and figure out blind. There's a reason why clearing entire Savage tiers without outside help is a niche within a niche in XIV. It requires people who are very, very patient with themselves and their team so they don't mind if the clear takes multiple months. It looks like you've gotten a handle on what that reason is.
To be fair to Gorgon deluxe, you now have 3 debuffs to work with, so it's best that you take the time to understand what those two new debuffs do.

I think you are a bit too hard on yourself. It's final boss of the 2nd raid tier ergo the hardest boss in savage- P9S-P11S are not going to be this difficult only P12S is to possible matching it
