I think the watcher being the last god is a red herring. I think the opo is the nameless god watching over deryk, his charge. As it seemed weird to me that deryk made a big deal over the opo opo not having a name.

Regarding the pondering at the end: I think they made sure we understood that once the ancients accomplished their life goals they returned to the star for a reason. Partially because that makes Hades and Hythlodaeus leaving after helping in Ultima Thule that much more poetic but also for this story. I think they know with the final days averted and Hydaelyn gone, it is time for them to return to the star.
As far as the Epigraph that "helps them remember" it could very well be something like the crystals made to store the memories of the convocation. I think you may be on to something with Deryk being tied to Azem. They are using the legends of the twelve being written by men and therefore fallible to good effect so we can't trust the Eorzean creation theory completely (for example, the story includes Hydaelyn creating Midgardsormer as a guardian). They do, however, say that Oschon came along later than the rest. I think it's entirely possible that Hydaelyn retrieved a sundered shard of Azem after a rejoining and used it to create Oschon. Thay may be why he wanders and pretends to be human but he just seems… off. Out of all of them, he is a creation rather than ascended ancient.
