Minions can have very amusing interations with you or nearby minions, I try to pet everything to see if they give me reactions XD
Have you found the Lord of Verminion tables in the Gold Saucer? It's a sort-of-RTS that you can play with your minions, either against an AI or against another player (assuming you can find anyone willing to play it, it's pretty dead).

cute. and yes few minions do recognise each other and interact with each other. The cat and dog u get in Aleport fight when they near one another and when 2 moogle minions meet they dance around each other. Some minions have amusing flavour texts some a bit disturbing >.>

Yes, minions can do some funny things. Don't worry; Fat Cat rolls over randomly, even when there's no Onion Knight attacking it.
