Are you kidding me?! This was an absolute hoot to watch.
Don't be too hard on yourself. There's a bajillion systems and terms in this game that it's a real labyrinth. Just play if it's fun and take a break when it's feeling like a grind.

So about dungeons going fast, yes, old content is getting power crept BUT as you saw, ARR also has a lot of silly little dungeon that you need to know to solve. So that boss killing you as your party member seem to have explained is one of those. You get a "doom" debuff that is guaranteed to kill you, its a mechanic that will come back but the way to get rid of it isnt always the same. In most fight it is simply "go back to full health" but in a few cases it is "go to this glowing spot." And this unhinged boss fight also feature "final sting", the bee monster can use that attack and they basically kill one party member at the cost of their own life, so you have to kill them quickly. A lot of things that can be hard without prior knowledge
There's a lot of optional side content that gets completely overlooked if you just stick to the main story. While, of course, seeing someone go through the main story is a big draw, watching people explore the other various aspects of the game is also entertaining.
There's no rush and it actually helps if you familiarize yourself with these earlier systems now instead of coming back after finishing the story. When you're a level 100 god slaying savior of the world and get asked to kill 3 level 10 bats to prove to your Grand Company that you can take care of yourself, it kind of undercuts your achievements.
So this happened off screen so not sure if you're just doing it already, but you should've unlocked grand company expert deliveries when you got to second sergeant. This allows you to turn in dungeon gear and certain crafts/gathering items for seals. So, every time you do a dungeon going forward, need/greed all items in chests so you can earn extra seals.
The seal earning potential of the dungeon items is relatively low at lower levels, but it's better than nothing and people often pass on enough of this stuff that it could be a significant step towards your goal.
The next two ranks will also send you to two additional optional dungeons you likely haven't done yet. Both are on the tougher side. I can offer tips if you don't mind having that aspect of them spoilt! Though hopefully, as with Qarn, there'll be someone patient who'll let you know about key points (🐝)

ironically the hardest, most annoying dungeons in the game are those ARR dungeons. A lot of them have invisible/nebulous mechanics where no one is sure what's going on and people just power thru it.

True gamer hiatus moments
Never seen that Wide Volley animation before, that looks cool.
I, for one, had a blast watching this! xD It's good to see people enjoying the game by just playing it, so I had a lot of fun. I know nothing about housing (I have an apartment and immediately paralyzed myself with choices), but some people have made AMAZING houses that are a joy to explore. You can go into the housing districts and just walk around if you want, you'll probably find some good ones. There are also some great housing showcases on Youtube – I especially like the channel of Denmo McStrongHuge, he makes some beautiful videos showing off people's homes – and they really bring the creative side of the community out.
